Dessert Quesadillas

Move over cheese, peanut butter and chocolate are taking your place! Whaaat? The idea of turning two soft tortillas into a warm and gooey dessert is just fascinating to me. And, I absolutely  love Julia’s combination here. It looks like it has just the right amount of sweetness! You could get creative and add other things to the mix as well; Nutella, marshmallows, caramel, candy pieces, etc. Hop on over to A Cedar Spoon for the recipe and baking instructions!

Microwave Mug Cake

This easy cake recipe just goes to prove that the microwave is in fact the greatest kitchen invention. Like me, I’m sure you’ve had some serious cravings for something sweet, but don’t want an entire cake or pie sitting on your counter to temp you. Hop on over to Live Love Pasta to see just how easy this single serving of mug cake actually is. Less than 5 minutes!

Breakfast Ham Cups

Muffin tins are my new favorite kitchen tool. There are so many wonderful recipes that the muffin tin makes a little easier and a lot more fun! These little Ham Cups from Menu Musings are perfect individual size breakfast bites for a weekend breakfast at home. You could even make each one different to suit everyone’s personal taste! Hop on over and visit Julie for the recipe and instructions.

Marie’s Zucchini Ribbon Salad

If you haven’t paid Marie a visit over at Proud Italian Cook, it’s definitely worth the visit! She is an amazing cook with lots of great Italian recipes. I’ve fallen in love with her Zucchini Ribbon Salad Recipe. A vegetable peeler is all you will need to create the zucchini strips. Or, even better, aVeggie spiral slicer! They make for really pretty salads, and add a lovely flavor and texture! Give it a try!

Jello Watermelon

As soon as summer hits and watermelon is in season, I’ll be doing this! It just looks like so much fun! My kids would love to eat this out by the pool. And, how cool would this be for a 4th of July party?! I’ve also seen this made with mini chocolate chips. You can poke them through the Jell-O with a chopstick. Go check out the instructions over at Come Together Kids!

Homemade Almond Joy Bars

Anyone who is a coconut fan knows the joy that comes from an Almond Joy. Although I didn’t have an appreciation for them as a child, it’s one of my favorite candy bars today. Yes, you can just go buy them at the store, but these would be fun to make for a party or as holiday gifts. They are also a bit healthier with less ingredients! Go check out the recipe and instructions over at Oh Nuts!

Easy Baked Potato Casserole

Quick, easy, and satisfying! You could make this as an individual serving, or even as a side dish for dinner. Potatoes just make me so happy! If you’ve never tried that Progresso creamy three cheese cooking sauce, you’re missing out! It makes awesome mashed potatoes. Go get the recipe and instructions over at Quick Dish. Bookmark them as a favorite because they have a huge easy recipe index.
